[Food Review] Media Tasting at Sunrise Bistro & Bar

Had a chance to attend media tasting at Sunrise Bistro & Bar. Had a fun chit chat with fellow food bloggers as well as Chef Vincent. Well perhaps one of my best dining experience, good foods and good companion.. Happy tummy and happy soul.. 🙂

A little bit background about this newly set-up bistro at East Coast Parkway (Big Splash area). Sunrise Bistro & Bar offers diners a quaint place to chill with its repertoire of cuisine, an extensive wine list and a good mix of small bites and sweets. Helmed by its co-founder and chef with an impressive 22-year culinary experience, Chef Vincent Teng is affectionately known for his specialised skills in Sous Vide cooking, modern European cuisine with a contemporary twist and a fine blend of creativity.

Sous Vide is a method of cooking in which food is sealed in airtight plastic bags then placed in a water bath or in a temperature-controlled steam environment for longer than normal cooking times. The intent is to cook the item evenly, ensuring that the inside is properly cooked without overcooking the outside, and retain moisture.

The bistro is very cozy, suitable for dine with family.

Seafood Chowder Soup
Creamy seafood soup with seasonal fresh seafood topped with chives and extra virgin olive oil. 

It was a comforting food, very rich cream and comes with real fresh seafood-prawn and mussel, not like other seafood chowder soup in the market where usually seafood already chopped and not so fresh.

Seared Foie Gras
Seared goose liver on brioche bread layered with mango with citrus jam and berry compote.

Main Course
Sunrise ‘Fish & Chips’

Crispy fried red snapper with lemon myrtle pepper served with mango salsa, tartare sauce and french fries.
I am a fan of fish and chips, but somehow i don’t like the batter is too thick and the fish meat inside is very small. But here, the fish and chips is really having a very thick fish meat and just a thin coating of batter. And the fish skin is very crispy, love how it goes with sweet and sour salsa sauce, accompany with french fries and tartare sauce. Perhaps the best fish and chips i’ve ever tried – more to asian style.

Cereal Crusted Cod Fish
Baked Cod fish with cereal crust served with seasonal vegetable braised in sesame oil and ginger shoyu broth.
I love this cod fish, the meat is very juicy and the smell not too strong (i am very sensitive with food smell). Really like how it goes well with crispy cereal crust.

Asian Five Spice Duck Leg Confit

Sous vide 8 hours crispy duck leg infused with five spice served with citrus salad and passionfruit salad.
Dug leg confit is always my favourite at bistro, just because of that ‘sinfully’ crispy skin. The meat is tender, rich of spices and goes well with passionfruit sauce.

Marmite Canadian Pork Shoulder

Sous Vide and grilled pork shoulder with marmite marinate served with seasonal vegetable.
Again, because of that sous vide thing, the meat is very tender and the spices marianted deep into the meat. The smell is like bakkwa.
Chef Vincent gave us this marinated marmite pork shoulder for us to try cook this at home. It’s super easy, from the vacuum pack, defrost the meat on the hot water for about 15mins and heat with microwave for about 30seconds. It’s healthy way cooking, no oil, no preservatives and no MSG.

BBQ Beef Short Ribs

24hrs sous vide to tender and roast with homemade BBQ sauce served with seasonal vegetables.
The beef meat is super tender and marinated very well, the spices go deep into the inner meat. Cooked in medium rare, where you can taste the meat is still very juicy.

Dessert

Tiramisu Semi Freddo

Semi frozen mascarpone cheese layered with coffee liqueur jelly sponge topped with milo crunch and tuile biscuit.
The cheese flavour is pretty light not too ‘heavy’, it’s very soft and easy to melt, so you have to quickly eat it.

Salted Egg Yolk Custard Molten Chocolate Cake

Warm chocolate cake with melting salted egg yolk custard in the center served with vanilla ice cream. It’s made from callebaut chocolate where 54.5% cocoa more milky taste rather than bitter and frozen custard egg yolk.
Trust me, it’s super yummy molten cake.. It’s such an unforgettable flavour, warm chocolate cake and melting salted egg yolk custard goes really well with vanilla ice cream.

Bar Menu

Crispy fried luncheon meat with tartar sauce, French fries served with tartar sauce and beer. Frankly speaking it’s my first time trying fried luncheon meat, and surprisingly it’s super yummy.. I even asked chef Vincent how to made this yummy snack. He explained that the luncheon meat need to be frozen and while frozen they will cut with mandolin cutter and deep fried the luncheon meat. Crispy luncheon match well with sour tartar sauce topped with a bit of chili powder. 
Oh my, i promise want to try to cook this at home with my newly bought airfryer, haha..
